Warm your cockles……

hello world……today is one of those typical summer days in scotland….rain and dull…..i swear they should re-write the twilight books to be set in scotland the vamps could live here all year round we dont have sun at all….hahhhaa   ANYWAYS back to the task at hand…… look outside… is it all cold an wet??  well this is the lunch for you …..   I first tryed this soup years ago when my cousin cheryl made it (we have some very talented cooks in the family) and i loved it but have never been able to find a recipe for it so here is my recipe iv worked on i hope its up to scratch.   Also this recipe is for a vegan soup but you can change it to non vegan if you wish but dont……haha

red pepper an cream cheese soup    (serves 4)


1 onion chopped

3 red bell peppers, seeded and chopped

1 clove of garlic, crushed

1 oz vegan butter alternative…pure or earth balance

1 potato peeled and chopped into small chunks

1 tsp sugar

2 vegetable stock cubes made up to 2 pints with hot water

100g vegan cream cheese


1.  sweat your onions with the butter on a low heat for about 5mins then add everything else (except cheese) and simmer for 20-30mins.

2.  allow to cool slightly and blend untill smooth with a stick blender and add the cheese while blending…..add some salt and pepper to taste and serve with some fresh bread or baguette.
