cabbage soup…..

hey 🙂  hope your all well and enjoying some nice autumnal weather…..im still eating soups due to my jaw problem but im having fun with it….im gonna lose a few lbs (hopefully lol) for my hubby getting home from work in a month or two so the challenge is on with a few of my girlfriends were doing workouts everyday and eating healthy as usual but as im eating soups i have to switch things up a bit …..this recipe is for the “cabbage soup diet” which is a ridiculous diet if u ask me your body needs all sorts to keep healthy not just soup (try telling my dentist that lmao)  but i really love the soup so if i can have yummy soup then thats all i care about….also i sometimes add a handful of wholewheat mini pasta shapes or even break up spaghetti into it for a filling meal 🙂   so if your losing weight or just fancy some soup here it is …….

 

ingredients for serving 4 people:  you need a really big pot if not then just cut the recipe down

  • 1/2 white cabbage chopped into chunks
  • 2 carrots peeled and chopped
  • 1 onion chopped
  • 2 ribs of celery chopped
  • 1 bell pepper chopped (any colour)
  • handful chopped mushrooms 
  • 1 leek chopped
  • 1 tin chopped tomatoes
  • 1ltr vegetable stock or bouillon 
  • salt and pepper to taste

method:

  1. throw all your chopped veg and stock into a pot along with the tomatoes and simmer foe an hour to an hour and a half giving it a stir every so often to make sure it doesn’t stick to the pot and taste then add your salt and pepper according to taste. 
  2. once its ready it will keep in the fridge for a couple days or freeze in portions for use when you feel like some soup 🙂 

you can add chili powder or some hot sauce if you like too, i don’t usually but from time to time i like to spice things up 🙂

Magic Soup….(“chicken” noodle soup)

Hey everyone…..here’s a recipe for some Magic Soup or “chicken” noodle soup as adults call it lol im still a big kid and when im ill this Magic Soup makes me better ….iv only been able to eat soup recently due to my jaw being poorly so until I get my surgery to correct it ill be posting easy to eat food lol lots of soup and things to come J  hope you enjoy this soup and if you serve it to meaties they wont even notice its nicer than the kind with real chickens in it….. very tasty and also awesome if you are feeling under the weather, there’s nothing that cures feeling ill than chicken noodle soup its magic  🙂    

 

Ingredients:

 

2 pints of vegetable stock (I use marigold boullion mixed with hot water)

Drizzle of olive oil

1 clove garlic

3-4 carrots

3-4 celery stalks

1 cup chicken style pieces (thawed if frozen and chopped up tiny)

bay leaf

a few whole peppercorns

1/2 pack wholewheat noodles

Handful of fresh parsley chopped

Splash of shoyu (soy sauce)

white pepper

salt

 

method:

 

1)  Finely chop the garlic, peel and slice the carrots and dice the celery.

2)  Heat the oil in a large soup pot, add the garlic, carrots and celery.

3)  Add the chicken style pieces and stir to colour slightly.

4)  Add your bay leaf and peppercorns to the pot along with the stock and bring to the boil then simmer for about 20-30mins

5)  Boil the noodles according to packet instructions in a separate pot (be sure to under cook the noodles as they cook in the soup) and set aside (I portion it up and sit them in everyone’s bowls)  

6)  Taste the soup and add a splash of shoyu, parsley, a pinch of pepper and some salt to taste.

7)  Ladle the soup into the bowls of noodles and serve 🙂 yummy

in this photo i had ran out of wholewheat noodles so i just threw in the noodles from the cheap ramen noodle packets (super noodles or ko lee noodles, that kind of thing) just use your fave noodles…..or even break up spaghetti pasta into tiny bits or use pastini or little pasta shapes…..

veggie supreme ….

hey peeps i hope your all well 🙂  iv been a busy bee recently an not even had time to cook properly iv been throwing “chicken noodle soup” together for dinner and lunch or even some noodles lol  anyways this is a very yummy recipe that even meat eaters enjoy and very easy too 🙂  the story behind this recipe is my gran used to always make a variation of this dish (but with chicken) but i didnt like it but liked the idea of it….and so it began….my experimenting to make it for it doesnt make me sick as im lactose intolerant and allergic to meat lol  soooo here goes…i hope you all love it as much as my little family likes it 🙂   i use a large wok for this dish i love woks there so versatile 🙂 

 

ingredients:

 

1 onion chopped

2 garlic cloves

tin of sweetcorn, drained

1 chopped red bell pepper

two good handful’s of sliced mushrooms 

cup of white wine

cup of vegetable stock mixed with hot water

1/2 cup of soya cream…..i use alpro single cream

handfull of parsley chopped

salt and pepper

 

method:

 

  1.  fry your onions, peppers and mushrooms in a drizzle of veg oil till there soft then add the garlic till fragrant then add the sweetcorn.
  2.  add the wine and bubble lightly for about 3-4 mins to let the alcohol bubble off and add your stock and cook on a slow simmer adding your pepper and salt……for around 10 mins
  3.   now add your cream and parsley and simmer for 5mins stirring until combined.
  4.   serve with some wholewheat rice in a deep bowl with lots of supreme on top and mix through.
  5.   step 5 is to enjoy every mouthful 🙂  and this can be served to kids as the alcohol in the wine cooks off……if you cant have wine in your diet at all then just double your stock……another tip is to add a little dash of water whenever you think the sauce is too thick during cooking 🙂

my birthday ….

hello everyone 🙂  sorry iv been away from the computer for ages cos iv been feeling sorry for myself lol  i have twisted cartilage in my jaw joint and only been aloud to eat soup and mooshy foods for weeks untill after i have the operation to fix it……but today im having a day off cos its MY BIRTHDAY 🙂   all my family came round and brought me a “cake” hehe  got lots of vegetables from my aunt and things to make thai red curry 🙂  and even some miso soup 🙂  now thats my kinda birthday gift hahaha

i also got a lovely surprise from my husband who is currently deployed with the armed forces and i havnt been able to speak to him for months but today i got a card sayin how much he misses me and gorgeous flowers 🙂    

 

tonight ill be having some thai red curry with lots of veggies in it and noodles…..thats mooshy enough..right? hehe  ill just have to take some painkillers later on since my jaw will be sore lol  oh well nothing could upset me today 🙂  

 

what more do we need….love…family and fruit an veg……in my eyes thats all we need in life …..ill celebrate my birthday agen when my love comes back and go out for some japanese 🙂
